Black Bean Burgers

3 16-oz cans black beans — rinsed & drained
1 1/2 cups uncooked oats
1 large onion — chopped
3 jalapeno peppers — chopped
3/4 cup chopped fresh cilantro
1 teaspoon sea salt
1/4 cup oat bran
1 tablespoon olive oil

Coarsely mash beans with a fork.

Combine all the ingredients.

Cook patties in hot oil in a large non-stick skillet over medium-high heat for 5 minutes on each side or until lightly browned.

Drain on paper towels.

Serve on lettuce leaves, or slices of tomato.

 

 

Date Nut Logs

1 1/2 cups dates
1 cup pecans, almonds or walnuts
1 cup unsweetened grated coconut
1 teaspoon cinnamon
1/2 teaspoon vanilla

In a food processor process the nuts until finely chopped.

Add the coconut and briefly pulse chop until mixed.

Add the cinnamon and vanilla.

Add the dates a few at a time, processing until well mixed.

Transfer the mixture to a large bowl and knead.

Roll the mixture into finger shaped 3 inch logs, or roll in balls.

Refrigerate until use.

This confection will keep in the refrigerator for up to two weeks, or longer in the freezer.

It yields approximately 24 pieces.
